Kids In Pics 52/4

I don't really know when that week turned into the weekend. Maybe it's all because our dearest friends visited us, maybe because we're ill again... But I've managed to finish Little Boy's dribble bibs. Finally!!! There are still some projects that are awaiting finishing, so hopefully I will get better over next few days and find more time to finish them, take some photos and post the on a blog. Meanwhile, we've got another Saturday, and that means another Kids In Pics!

The whole year has got 52 weeks. Each Saturday of the year (ok we've missed one) we will present pictures of our kids taken in that week. This can be one photo or a whole bundle of photos. At the end of the year we should have a nice gallery of how our Little Ones have changed during a year. A lovelly combination of pictures that will be a great memory. To join the project just simply add a link to your post at the bottom of each Saturday post either on my or Joanna's blog,or both. Remember to place a button from chosen blog, or both in your post. Kids In Pics 52/2 and 52/3

This year didn' t start as we would all wish to. It is already a hard year and there is nothing we can do about it. I had so many plans which now have to wait... All our thoughts are turned to husband's father now. We all hope for the best...

When I look at these two the only thing does matter. To keep them safe. And even though I know it isn't possible to avoid everything, this is a big concern...

I couldn't write last week, I just wasn't able to think about anything else. So many things had happend...Little Girl had turned up 3 last week. There wasn't a big party, her dad could't be with us as he had to support his parents. But I've managed to prepare someting for our guests. I can't sometimes belive how quickly they grow... It was like yesterday when I hold her, so tiny, so delicate... And now she's taking my lipstick when I can't see her and argue with me all the time... Strong character...
All the best Sweety! 

Because last Saturday I've missed Kids In Pics, today I publish pictures from last Saturday and today's pictures.

Vegetable Spaghetti Pasta

Going on gluten free diet meant giving up most of my favourite dishes. Including Italian. I know there are plenty of gluten free pastas on the market, but mostly their ingredients are not good. I don't really like the idea of xantan gum. However, I do sometimes use ready gluten free mix when baking. Never mind as it is not about flour but about pasta without flour...




I was seriously concerned about Little Girls eating as she was (and still is) a pasta lover. My sister advised me to make a courgette pasta and that was it! For the first time it was rather tagiatelle as I used vegetable peeler. But then we decided to get a vegetable spiralizer. I've done my researches and chosen the best one for us. Since then I can eat our favourite spaghetti which maybe is far from Italian one, but for us - even better:)

Usually I use courgette to make my spaghetti pasta and carrot to make a broth noodles. But the spiralizer is perfect for making chips. And if you have a dehydrator you can go raw :D Perfect for apple, parsnip or beetroot chips!

So, the recipe is very simple. You only need a spiralizer and courgette. After spiralizing your courgette you have some options. You can boil it, you can steam it or you can leave it raw. It's entirely up to you. I boil mine in a tiny amount of water for just couple of minutes until it's warm and tender. Then serve it with a sauce. If you eat dairy you can use Italian style cheese. As we are dairy free we don't use it (well, hubby does). What you will see in pictures is actually almond meal.


































It was definatelly worth buying it! I got my spiralizer from here. I love kitchen gadgets, but this one is particularly good!

Kids In Pics 52/1

My blogging friend Joanna asked me IF I want to do the photo project with her. I thought "wonderful!" even though we know each other only through our blogs but we kinda think the same way. My answer was obviously "Yes".

 First of all  I like projects, even if sometimes, for some reasons it is hard to make them regularly. Then, I must say, I love Joannas idea! We both have kids, Joanna will soon become a second time mom, and we both like taking pictures, so the rules are just as simple as they can be and you are all more than welcome to join:)

Coconut pancakes - gluten and dairy free

I have tried many of coconut pancakes, those with flour and those with shredded coconut. All of them were far from my tastes. Their were either to dry or to eggy in taste and did not want to keep their shape. That is why I started trying to find my best solution for recipe. And I think I have made it. At least it is what me and the rest of us (apart from Little Boy obviously) find as not only edible, but yummy :D





The rest of recipe is very easy - just mix everything together like for ordinary pancakes. My hint is to use coconut oil for frying - it must be hot enough but not burnt. Use a table spoon, or a bigger one to place your mixture on a pan. It is better to keep the rather small.




 As You can see I am using Raw Virgin Coconut Oil by Optima. For my personal taste - this one is the best. Not only fo cooking.

 A bit of fruit of your choice...







 ... some honey, maple syrup. coconut cream or homemade peanut butter...




...and it is ready to serve.




 I love them with coconut cream ( The best I have found is by Sainsbury as it has got not bad ingredients.) then a splash of maple syrup and some donut peach chunks*. Yuuummmmyyy! 




*It also tastes great with blueberries!

Have a rainbow dreams!

Setting up this blog is a huge difference as this time I do not have that much of free time. The layout is not yet what I want it to be and it will take more time than I planned. But you can now Follow my blog with Bloglovin, you can also find me on Facebook!

The New Year has just come bringing new hopes and new dreams. I don't really have a list of goals fo 2015. Instead of that I wrote my dreams on a piece of paper and I wish myself at least some of them came true. This is what I also wish for all of you. 

If we speak about dreaming and having head in the clouds... I came with the idea of a rainbow cloud somewhere on a Pinterest (where else...) and fell in love with it! It reminds me of my Little Girl whose imagination is just surprising. But this one was sewn for another Little Girl called Lea, who has stolen my heart recently:) Little Girl and Little Boy will have their own as well.

















As I finally got a concept for Little Girl's room I can start collecting things and you can be sure that I will share the progress in works:) Little Boy's room will also be done, even though he feels comfy in our bedroom. So stay tunned if you want to see what I planned for them!
